1000g x minced beef
350g x minced pork
5 x small cooking chorizo sausages (diced finely)
2 x egg yolks
2 x red onions (finely diced)
2 x fat cloves garlic (grated)
1x tsp ground cumin
1 x tsp ground coriander
1 x tbsp dried wild oregano
4 x tbsp chopped parsley
Few dashes of Habanero chilli sauce (or a chilli paste)
Handful of breadcrumbs
Salt & pepper

Weigh into 180g
Makes approx. 12 burgers


Mix all ingredients together well and form into 6oz burgers.
Cook on a griddle or pan fry.
Serve in a soft bun with salsa and a slice of melted Emmental cheese. Yum-yum!
